Another one from my husbands breakfast offering. He wanted to come up with a healthy pancake option for the kids, as they had to be served every Friday morning.

Serves 7-8 | Prep time: 10 minutes | Cooking time: 20 minutes

Ingredients

Dry ingredients:
150 g of rice flour
150 g of oats flour
4 tsp’s of baking powder
½ tsp of bicarbonate of soda
2-3 tsp’s of cinnamon powder

Wet ingredients:
300 ml of semi-skimmed milk (or any other of your choice)
8 egg whites
1 tsp of vanilla essence
4 ripe bananas, mashed very well
2 floz’s of very light olive oil, the type that is suitable for cooking

Sift both flours, baking powder and bicarbonate of soda into a large mixing bowl. Then mix in the cinnamon powder. In another mixing bowl add all the wet ingredients together and whisk. Then pour the mixed wet ingredients into the large bowl with the dry ingredients and whisk well. Now mix in the mashed bananas and whisk, but don’t go crazy mixing it too much. Once the pancake mix is ready then place a high quality non-stick pan on a low heat and allow to get hot. Once you feel the pan is ready, pour in a ladle full of the pancake mix to cook. Make sure you watch it until you see bubbles forming on the exposed side. Then flip over and take of the heat after the base has cooked. Ensure that the pan doesn’t get too hot, as you will risk over cooking the pancake.

Enjoy with some fresh 100% maple syrup, fruits or some of Moni’s fresh raspberry jam.
