Since becoming vegan, I’ve been making this scrambled tofu as a great breakfast option. Looks wise it is very similar to traditional scrambled eggs, but with a unique delicious texture and flavour. Super easy and quick to make and you can add to it whatever you like, mushrooms, vegan cheese etc. Served on toasted sourdough, simple and delicious. I hope you enjoy it as much as I do. Moni xx
