Can you think of anything nicer than a bowl of delicious of hot soup with a hunk of bread. My vegetable soup fits the bill, stuffed full of fresh nutritious veggies and with no nasty ingredients at all. Serve and enjoy with one of Moni’s range of Quinoa breads.

SERVES 8 | PREP TIME 15MINUTES | COOKING TIME 30 MINUTES

Ingredients

500g pumpkin diced
2 carrots diced
100g green beans diced
1 red pepper diced
1 leek sliced
1 large red onion diced
1 garlic glove chopped
1 tbsp of organic vegetable bullion stock
2 tbsp very light cooking olive oil
1000ml water
Sal & Pepper

Place the oil in a pan and fry the onion until soft, add all the remaining ingredients with the stock and cook for approximately 15 minutes until it is boiling and the vegetables cooked. Place it in a food processor and blend till smooth. Check the seasoning and serve.
