Moni’s Egg Fried Quinoa is a nutritional variant on the classic. Deliciously spiced with a beautiful textured and packed with goodness.

Ingredients

  • 200g quinoa cooked
  • 100g firm tofu cut in cubes
  • 2 tbsp olive oil
  • 1 tsp tamari sauce
  • 2 stalk of green onions chopped
  • 1/2 tsp fresh ginger
  • 40g red pepper chopped
  • ½ cup frozen peas
  • 3 organic eggs
  • 1 tsp turmeric
  • 2 tbsp coriander chopped
  • Salt & pepper
  • chilli flakes
  • lemon

 

First put the tofu in a large colander with a plate on top to place pressure, draining excess water (2 or 3 large potatoes works well). Set aside for 30 minutes. Remove the plate and cut the tofu in about 2cm cubes.

First cook the quinoa as per the package. Heat the olive oil in a frying pan and then cook the green onions and ginger for 1 minute. Add the red pepper, peas, tamari and cook for another minute. Pour in the quinoa and season with 1tsp of turmeric, salt, pepper and mix well. Carefully stir in the tofu to the quinoa. Make a well in the middle of the mixture and add the eggs, carefully scrambling and mixing them well with the quinoa. Add a good squeeze of lemon, some chilli flakes, mix in the coriander and enjoy.
