Quinoa, that amazing super grain. My aim since discovering it years ago is how to develop recipes that incorporate it and are tasty enough for the whole family to enjoy. My quinoa burgers are a great convenience food, they can be prepared days in advance and cooked when you need them. In fact I usually batch them up and keep them in the fridge ready to be served up with a meal or just on their own with some lovely chutney.

SERVES 8 | PREP TIME 15MINUTES | COOKING TIME 30 MINUTES

Ingredients

450g cooked quinoa
3 bunches of spring onions thinly sliced
1 medium red onion finely diced
2 eggs beaten
80g breadcrumbs or ground flaxseed (flaxseed helps to make them more moist)
3 tsp cumin
2tsp coriander
2 handful fresh coriander
2 tsp salt
Ground pepper to season

Place all the ingredients in a large bowl and combine them well. Shape the mixture into standard small sized burger patties and place them on a lined baking tray in the fridge for 30 minutes to allow them to set.

Place them in a pre-heated oven set at  and bake if tor 20/25 minutes. Serve hot as a side dish or on their own accompanied by some chutney and a green salad.
