1 sweet potato cut in wedges
2 beets cut in wedges

2 tbsp olive oil
1 tbsp grained mustard
1 tbsp honey

Place all ingredients in a baking tray, add a good grind of salt and pepper. Pour in the dressing ensuring you coat everything well. Bake for 25 minutes only as you want to have a bite and crunch.

Whisk everything together until you have a thick and runny consistency.

Serve on its own or with some quinoa.
