Moni’s baked broccoli patties, packed with vitamins and lovingly baked for a gorgeous texture and a delicious savoury flavour.

SERVES 8| PREP TIME 15 MINUTES | COOKING TIME 25 MINUTES

Ingredients

  • 2 large broccoli grated
  • 100g almond flour
  • 2 large spring onions chopped
  • 2 garlic glove chopped
  • 2 tsp cumin
  • 1 tsp chili flakes
  • 2 eggs beaten
  • 100g nutritional yeast
  • Handful of coriander chopped
  • Zest of 1 lemon
  • ½ tsp salt
  • ¼ black pepper

Combine all the ingredients together, except for the eggs. Add one egg at a time and mix with a spoon slowly not to make the mixture too wet. If too wet add more almond flour and if too dry add another egg. Season with freshly ground salt and pepper. Shape the mixture, place on an oven-paper lined baking tray and bake for 25 minutes.
