Ingredients

• 340g tofu  extra firmed
• 2 tbsp olive oil
• 1 courgette grated
• 1 carrot grated
• 1 pack of brown rice noodles

Sauce:

• 1x400g coconut milk
• 1 tsp turmeric
• 1 tsp coriander seeds
• 1 piece of ginger chopped
• 2 garlic glove
• 2 tsp cumin
• 2 tbsp tamari
• 2 tbsp maple syrup
• ½ lemon juice
• Pinch of chilli powder

Cook the noodles as per pack instructions.

Blend the ingredients for the sauce until smooth, then set aside.

Heat the oil in a pan and sauté the tofu till they lightly brown, then add the vegetables and sauté for about 3 minutes. Pour the sauce to the vegetables and cook for another 10 minutes. Add the cooked noodles, combine well and heat for 2 minutes. Garnish with coriander and serve.
