Serves 4 | Prep time: 5 minutes | Cooking time: 30 minutes |


•1 medium size courgette grated
•1 carrot grated
•½ red onion grated
•1 tsp salt
•1 handful coriander chopped
•2 tbsp of nutritional yeast
•2 tbsp white chia seeds mixed with 4 tbsp water
•1 tsp cumin
•1 tsp garlic powder
•1x200g can of pea
•Salt & pepper

Grate the courgetti, carrot and onion and squeeze the water out with a tea towel. Put the chia seeds in a bowl with water, mix and set aside for 5 minutes. Drain and mash the peas well than add to the grated veggies bowl and combine well. Add all dried ingredients and taste for seasoning, then add the chia mixture , chopped coriander and combine again.

Make the patties of about 75g weight each. Place in the fridge for 30 minutes to set.

In a hot pan add some light olive oil and sautee the patties for 5 minutes on each side, then place in a baking tray and bake for another 20 minutes.

Serve with a tomato and avocado salsa.
