Serves 10 | Prep time: 10 minutes | Cooking time: 30 minutes |


  • cups of camargue rice rinsed
  • 1 large red onion chopped
  • 2 garlic  glove chopped
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • ½ lemon juice
  • 2 tbsp tamari
  • 1 artichoke cut in wedges
  • 1 sweet potato cut in cubes
  • 300g butternut squash cut in cubes
  • Handfull of spinach
  • Salt & pepper
  • Coriander chopped

Cook the rice as per pack instructions and set aside to cool. Place all the vegetables in a baking tray with a splash of olive oil, salt & pepper and bake for 20minutes, setting aside once cooked. In a pan sauté the onion with the olive oil until soft and brown, add the garlic and cook for another minute. Mix the spinach in the pan and combine with the sautéed onions and garlic. In a bowl add all the liquid ingredients and whisk well. Mix the rice with the vegetables then add the dressing and combine well, taste for seasoning. Garnish with coriander and serve.
