Serves 10 | Prep time: 10 minutes | Cooking time: 25 minutes |


  • 1 kg of potatoes
  • 2 tbsp chopped fresh dill
  • 5 small pickled cucumber sliced
  • 2 spring onions thinly sliced
  • 2 tbsp lemon juice
  • 1 tsp maple syrup
  • 340g Greek yoghurt (dairy free optional)
  • 170g plain yoghurt (dairy free optional)
  • Salt & pepper

Peel the potatoes and add them to boiling water. Par boil them for approximately 15 minutes and set aside to allow them to cool.

In a large bowl add all the ingredients, tasting for the right seasoning. Add the potatoes and combine well. Keep in the refrigerator, ready to serve.
