Ingredients

  • 500g cooked chickpea
  • 3 tbsp olive oil
  • 2x 400g tomato sauce + 1 tin of water
  • 1 large red onion chopped
  • 3 tbsp tomato puree
  • 1 tsp maple syrup
  • 2 garlic glove chopped
  • ¼ tsp chilli flakes
  • 1 tsp cumin
  • ½ courgette chopped
  • 1 red pepper chopped
  • ½ tsp salt
  • 1/4 tsp pepper
  • handful coriander chopped

Heat the olive oil in a large pan and then sauté the onions for 2 minutes or until soft and brown, adding the garlic for another 1 minute. Add the tomato paste and combine. Place the red pepper and all spices in the pan and cook for 1 minute. Add the tomato sauce and water and simmer for 20 minutes, incorporating the chickpea and courgette and cook for another 5 minutes. Taste for seasoning. Add the coriander and serve.

Delicious with brown rice or quinoa.
